Right so, I want to jail break my iphone, but I'm scared to because I don't know much about it aside from getting a software and clicking jailbreak.
What I heard was that if you turn off a jailbroken iPhone or let its battery charge run out, the iPhone will brick/not function properly. Is this true?
Also, is it safe to charge an iphone over night?

Ok first of all you do not sound like you are very educated in this, therefore i do not recommend you jailbreak your iphone. The only way you wouldn't be able to turn off you phone is if the jailbreak was tethered. Make sure it is untethered. Also it is safe to charge overnight
